We love eating out.  Some nights just scream for a meal away from home.  You know what I mean.  It’s been a super busy or stressful day and you just don’t feel like cooking and cleaning up the mess afterward.  Some weeks I have more days like that than I care to admit.  For the most part though, I cook at home and I love it.  We have lots of favorite things that we get when we eat out and I love coming home and finding recipes that are similar or creating my own.  It is definitely cheaper to cook for a family of five than to take us all out to eat.  We have two teenage boys.  Need I say more?

Fried rice is one of the boys favorite foods.  They love it.  I try to add it into the family meal rotation at least once a month.  It really is easy to make, although I tend to be very messy when I make it.  I guess I get a little wild with mixing and tossing my rice around in the skillet.  ha! ha!

This recipe has garlic in it.  It makes everything better.  We use it ALL the time.  I buy it in huge containers from our local Costco store.  I highly recommend you pick it up.  Most of the time this is what I use when a recipe calls for garlic.  I know it would be better for me to chop up fresh garlic, but I am all about making things easier and faster.  This is what the garlic looks like.  It may vary by location, but that is what we have around here.  We go through a couple of those jars a month.  I told you we love garlic!

Anyway, I wanted to share our Chinese Fried Rice recipe.  This is really close to what we get at our favorite local Chinese place.  Try it.  I think you’ll love it!

Chicken Fried Rice

Ingredients
  • 8 cups rice, cooked
  • 1 pound cooked & chopped boneless, skinless chicken breasts(marinated in soy sauce)
  • 2 cups peas & carrots, frozen
  • 1 white onion, chopped
  • 3 garlic cloves, minced
  • 4 eggs
  • 5 tablespoons sesame oil
  • ½ cup gluten free soy sauce
Instructions
  1. Prepare rice according to package instructions to yield 8 cups cooked rice.
  2. Heat sesame oil in a large skillet on medium heat.
  3. Add onion, garlic, peas, and carrots.
  4. Stiry fry until tender.
  5. Beat eggs in a separate bowl and then add to stir fry. Mix throughout vegetables.
  6. Add rice and chicken.
  7. Stir in soy sauce and mix. Remove from heat and serve.

Cilantro Lime Rice

You might have noticed that I like coming up with or finding recipes that mimic those that we love at restaurants.  This rice reminds me of Chipotle which happens to be one of my favorite places to eat.  Now if I could just figure out their steak marinade!  Yum!  Anyway, this rice is super easy to make, and especially if you have a rice cooker.  If you don’t own a rice cooker yet, go get one.  Seriously.  I never thought we needed one because I didn’t cook rice that often.  Well, now we have rice quite a bit.  Fried rice, mexican rice, cilantro lime rice… This makes it so easy and it’s always perfect.

Cilantro Lime Rice (in rice cooker)

Ingredients
  • 1 cup long grain white rice
  • 2 cups water
  • 1 tsp salt
  • 2 tsp vegetable oil, divided
  • juice of ½ lime
  • 3 tbsp chopped fresh cilantro
Instructions
  1. Add rice, water, salt and 1 teaspoon of the oil to a rice cooker. Swirl around gently in pan. Set the rice cooker on the white rice cycle.
  2. Once the rice gets done, add in the lime juice, cilantro and remaining 1 tsp vegetable oil. Gently mix and cover and let sit for about 8-10 minutes.
  3. Serve.

  • 1 cup extra long grain rice
  • ½ lime, juice of
  • 2 cups water
  • 1 tsp salt
  • 3 tbsp fresh chopped cilantro
  • 3 tsp vegetable oil
Instructions
  1. In a small heavy pot, add rice, water, 1 tsp oil and salt.
  2. Boil on high until most of the water evaporates.
  3. When the water just skims the top of the rice, reduce to low and cover about 15 minutes.
  4. Shut off flame and keep covered an additional 5 minute.
  5. In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.
  6. Serve & enjoy!
