We have a Mexican food night at least once a week around our house.  Sometimes even more often than that.  My favorite part of the meal is always the salsa.  Since we have it so often, I like to have a few different salsa recipes just to mix it up a bit.  You might remember our number one favorite, Fresh Homemade Salsa, that I posted before.  This Fire Roasted Salsa is our next favorite.  My kids swear it tastes just like Chili’s restaurant salsa.  All I know is that it is GOOD!  Oh, and super easy to make.  🙂

Fire Roasted Salsa
  • 1 - 14oz. can Fire Roasted Diced Tomatoes with Garlic
  • 1 - 14oz. can Rotel (Mexican style)
  • ¼ cup onion (or more to taste)
  • 1 tsp. garlic salt
  • 1 tsp. salt
  • 1 tsp. cumin
  • 1 tsp. sugar
  • 1 tsp. lime juice (I use fresh limes)
  1. Place all ingredients together in a blender or food processor and blend until smooth.

Need some more ideas for your Mexican food night.  How about Chipotle Lime Steak Fajitas, Spanish Rice, Cilantro Lime Rice or Pico de Gallo.  I promise you can’t go wrong with any of those.  Now I think we are going to have to do Mexican night here tomorrow night.  I can’t wait any longer for this stuff.  🙂

Fresh Homemade Salsa

I have been super busy in the kitchen over here.  You see I am in total denial that school is starting in just a few short days.  Normally at this time I am ready.  The kids are usually getting bored, they are starting to fight with each other, and I am ready for some peace and quiet.  Not this year.  We all want another month.  Sadly, we have 3 more days.  As the kids get older, time seems to fly by even faster.

The amount of school supplies needed for three children is ridiculous.  Seriously.  My dining room is full, and my wallet is empty!  I don’t remember having batteries, paper towels, kleenex, etc on my lists back when I was in school.  Do you?

On to the recipe for today.  I guess technically it isn’t all “fresh” since I do use canned tomatoes in this.  You know me though, I am all about finding short cuts to make life in the kitchen a little easier on us busy mommas.

Fresh Salsa -

Look at that bowl of heavenly goodness!  How could you NOT try this?  It has become a pretty regular staple around this house.  I make it about every other week to go along with one of our favorite Mexican meals.  I just can’t eat mexican without some good old chips and salsa.  This is the salsa that we crave!

The recipe takes a few minutes with chopping the onion, jalepeno, and cilantro.  You can just throw it all in your blender/food processor if you are short on time.  Either way I think you’ll find this one of the best, if not THE best, salsa you’ve ever tasted!  Be careful sharing it with others.  They will be asking you to make it and share all the time.  I speak from experience!  🙂

Fresh Homemade Salsa
  • 1 can (14 oz) Fire Roasted Tomatoes with Garlic
  • 1 can (10 oz) Rotel (diced tomatoes & Green Chiles)
  • ¼ cup Chopped Onion
  • 2 cloves Garlic, Minced
  • 1 whole Jalapeno, chopped
  • ¼ tsp Sugar
  • ¼ tsp Salt
  • ¼ tsp Ground Cumin
  • ½ cup Cilantro (more to taste!)
  • ½ whole Lime Juice
  1. Combine all ingredients in a blender or food processor. Pulse until you get the salsa to the consistency that you prefer.
  2. Test seasonings with a tortilla chip and adjust as needed.
  3. Refrigerate salsa for at least an hour. Serve with tortilla chips.
