You all requested more weeknight meals and I listened by bringing you this delicious Weeknight Baked Ravioli!!  I totally understand the need for more quick meal ideas.  We seem to stay super busy around here.  With one teen working three nights a week, two kids in piano lessons, one in drum lessons, school activities, etc, we are always limited on time during the week.  I am excited to share some of my favorites with you.

I know you are going to love this one!  It is kind of like a lasagna with ravioli.  Soooo cheesy and yummy!  Super quick and easy to put together too!

Weeknight Baked Ravioli
  • 3 pkg. (9 oz. each) Buitoni Refrigerated Four Cheese Ravioli
  • 1 jar of spaghetti sauce (or 3 cups homemade spaghetti sauce)
  • 1 cup Sargento 6 Cheese Italian shredded cheese
  • 1 cup Sargento Mozzarella shredded cheese
  1. Preheat your oven to 350 degrees.
  2. Lightly spray a 9x13 baking dish with cooking spray.
  3. Line the bottom of the baking dish with ½ of the ravioli in a single layer.
  4. Pour half of the spaghetti sauce over the ravioli and layer with half of the mozzarella and italian cheeses.
  5. Repeat by adding the rest of the ravioli, spaghetti sauce, and cheeses.
  6. Cover your baking dish with aluminum foil and bake for 30 minutes.
  7. Remove the foil and bake uncovered for 10-15 minutes more.
  8. Let stand for 5-10 minutes before cutting and serving.

If you prefer it meatless, feel free to substitute with your favorite marinara sauce.  We love using my homemade spaghetti sauce because it has all the yummy herbs in it!

I promised you that I would post our favorite meals on here, so today I am sharing our Homemade Spaghetti Sauce.

First, I have to tell you that it has been a busy week.  I am so happy that the weekend is FINALLY here.  You see, my husband has been away all week on business in China.  I hate these long international trips.  China is awful because he’s asleep when I’m awake and vice versa.  Being down one parent around here has definitely left me running around like a crazy lady!  I had plans of getting quite a few recipes loaded, but that obviously didn’t happen!  Oh well, leaves me more to share next week!  😉

One of the great things about spaghetti is that most people like it.  Now, of course, people have different preferences as far as marinara sauce or meat sauce, etc.  We are a meat sauce family.  This recipe is so good and I love it because it doesn’t require hours of simmering.  I hope that you love it too!

Homemade Spaghetti Sauce
  • 1½ lbs ground beef
  • 2-28 oz. cans crushed tomatoes
  • ½ onion, chopped
  • 4 cloves garlic
  • 1 tsp rosemary
  • ½ tsp sage
  • 1 tsp onion powder
  • 2 tsp garlic salt
  • ½ tsp oregano
  • ½ tsp dried basil or ¼ cup fresh basil
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tbsp oil
  • 2 bay leaves
  1. Brown ground beef in a large sauce pan. Add onions, if using, and cook until tender.
  2. Drain ground beef and set aside on plate.
  3. In the large saucepan, now add all ingredients (minus the meat) and cook on medium heat and simmer for 10-12 minutes.
  4. Add in ground beef and let simmer together for 3-4 minutes.
  5. Serve.



Mezzaluna Pasta Sauce

My kids had a good first day of school.  Two of the three said they had a great day and liked it a lot.  One is ready for high school to be over, but he has two years left.  I loved listening to my Noah talk about his day.  He kept saying how nice his teachers were and how he was going to have a good year.  He has such a positive, optimistic outlook on things (most of the time) and it is a characteristic I hope he never loses!!

Today I wanted to share with you another one of our meals that stays in the regular rotation. We absolutely love Carrabba’s Italian Grill.  My mouth is watering just typing the name of it.  Anyway, my oldest son and I get their Mezzaluna ravioli a lot.  The sauce is just incredible.  Well, this is a copycat of that and let me tell you it is SUPER CLOSE to the original.  It is so good and you can use it on ravioli, farfalle, or any other pasta you like.

Mezzaluna Pasta Sauce
  • ½ cup butter
  • 2 minced garlic cloves
  • 2½ cups half-and-half
  • 2 cups grated parmesan or romano cheese
  • ½ teaspoon pepper
  • 1 jar spaghetti sauce
  • ½ cup half-and-half
  • ¼ cup parmesan cheese
  1. Make the alfredo sauce. In a large skillet, melt butter.
  2. Saute chopped garlic over medium heat.
  3. Stir in 1½ Cups half-and-half.
  4. Cook over medium heat 3-4 minutes, stirring constantly.
  5. Add remaining half and half, Parmesan cheese, and pepper.
  6. Once made, add the spaghetti sauce and stir well.
  7. Then add the half and half and cheese.
  8. Stir until its a smooth sauce, should look pink orange.

This recipe was adapted from here with a few little tweaks.  

I recommend that you pair it with a nice french bread (we use Pillsbury’s Simply Rustic french bread– yum!) and the herb dip recipe that I posted earlier.  This makes one mighty delicious meal!
