I don’t really like plain root beer. Yet, my FAVORITE drink in the world is Dang’s Butterscotch Root beer. Have you ever had it? Oh my… it is AMAZING. It doesn’t sound like it would be that life altering, but it is. Sadly, we can’t get it anywhere around here so I have to buy it by the case when we go on vacation. I still have a few bottles hidden away in my closet from earlier this year. Sshhh… don’t tell my kids. I also really like Root Beer floats. Isn’t it funny how you can love everything made with something, but not like that something plain. My hubby is that way with tomatoes. He will NOT eat a tomato but he will eat everything made with tomatoes. I always thought he was so weird for that, until I closer examined myself and realized I am the same way with certain things.
When my friend Julie posted on her blog about Root Beer Float ice cream, I knew I had to make it right away. It is so easy to make and soooo good.
However, I always like to kick things up a notch, so I decided to make a float with the root beer float ice cream. Just pour your favorite root beer (I used IBC Root Beer) over the ice cream, sit back, and enjoy! Oh my goodness is it ever good. My middle son and I were smiling while we ate every last drop that was in our glass. As a matter of fact, it is on the menu to make again this week. I told you we loved it!
- 2 cups heavy cream
- 1 cup half and half
- ¾ cups sugar
- 1 teaspoon vanilla paste (or vanilla extract)
- ¾ teaspoons root beer extract
- In a mixing bowl, combine all of the ingredients and mix well.
- Pour into ice cream maker and prepare according to your ice cream makers directions.
- Put several scoops of ice cream into a glass.
- Pour your favorite root beer over the ice cream.
- Enjoy! 🙂
