Oatmeal Raisin Bars

Ingredients
  • 1 cup all purpose flour
  • ½ cup sugar
  • ½ brown sugar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon freshly ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ½ cup butter, melted and cooled
  • 2 cups quick cooking (not instant) oats
  • 1½ cups raisins
Instructions
  1. Preheat your oven to 350°.
  2. Line an 8x8 glass baking pan with parchment paper.
  3. Mix together the flour, sugar, brown sugar, baking soda, salt and spices in a large mixing bowl.
  4. In the middle of your dry mixture, add in the vanilla, egg, melted butter and mix until smooth.
  5. Stir in the oats and raisins until they are well distributed.
  6. Pour the batter into your glass baking pan and spread into an even layer.
  7. Bake for 22-26 minutes or until bars are set, edges are golden brown and the center no longer looks wet.
  8. Cool pan on a wire rack.
  9. Once cool, slice and serve.
