Cheesy Chicken Taquitos

Cheesy Chicken Taquitos | www.shariblogs.com

You know how you have those favorite family meals?  The ones where everyone in your family likes it so it becomes a regular in your home.  That is the case with these Cheesy Chicken Taquitos in our house. It can be really hard sometimes to find something that all five of us like, but there’s not one complaint when these are on the table.  They really are so good! I have to admit that I am a huge fan of mexican inspired food so I always love when I find a new recipe to add to our family cook book.

Author:
Ingredients
  • 2 cups shredded cooked chicken
  • 4 oz. cream cheese
  • 1 can rotel, run through food processor
  • ½ tsp cumin
  • 1 tsp. chili powder
  • 1 tsp garlic powder
  • ¼ tsp salt
  • 1 Tbsp. green onion, chipped finely
  • 2 Tbsp. cilantro, chopped finely
  • 1 Tbsp lime juice
  • 1 cup Mexican shredded cheese
  • 8-10 small flour tortillas
Instructions
  1. Preheat oven to 425°. Line a baking sheet with aluminum foil and spray with cooking spray.
  2. Soften the cream cheese for 15-20 seconds in the microwave.
  3. In a large mixing bowl, add cream cheese and rotel. Mix until they are blended well.
  4. Add cumin, shili powder, lime juice, and salt. Mix well.
  5. Add shredded chicken, mexican cheese, green onions, and cilantro. Stir until all is well combined.
  6. Add a line of chicken mixture about an inch from the edge of the tortilla. I use about 2 Tbsp or so of mixture per taquito. Repeat with each one and place on baking sheet making sure they aren't touching one another.
  7. Bake in the oven for 15-20 minutes or until they are lightly browned on the edges. Remove from the oven and serve.
  8. Enjoy!
Notes
* I used the medium size tortillas here and got about 7 from this recipe. We like to fill ours up. 🙂 You can get close to 10 when you use the smaller tortillas and don't use as much filling in each one.

Great Grandma’s Sloppy Joes

Great Grandma's Sloppy Joes | www.shariblogs.com

I call this Great Grandma’s Sloppy Joes because the recipe was passed down from my daughter’s great grandmother.  My mom grew up eating these, she raised me eating them, and now my daughter is enjoying them as well.  As a matter of fact, my daughter says these are number two on her most favorite foods list.  We aren’t big green pepper fans, so we leave those out.  However, my mom and Grandma were known for throwing some in there so feel free to if you like.  I know everyone probably already has a favorite sloppy joe recipe or they make some with that stuff in the can, but I hope you will try these sometime.  I really think you will be glad that you did!

I love that these are so easy to make and they warm over WONDERFULLY even after a couple days.  We are pretty picky eaters and rarely EVER eat leftovers, so believe me it is saying a LOT if I am telling you that they are good warmed over!

I do have to admit that my mom raised me to eat them with a little miracle whip on them. My husband says that totally grosses him out so he and the kids don’t do that!

Copycat White Castle Cheeseburgers

Copycat White Castle Cheeseburgers | www.shariblogs.com

I have so many memories of grabbing White Castle Cheeseburgers when we would go to Nashville to visit family or whenever we would pass one on the road during a trip.  They are now a big favorite with my family.  Whenever the kids see a White Castle, they always want to stop.  Where we live, we have Krystal.  It’s very similar but not the same.

One day I went on a quest to try my hand at making some of my own here at home.  I loaded up trusty Google and found quite a few recipes.  Some called for bread crumbs, others for peanut butter.  Yep, you heard that right.

I made up my own little recipe using a combination of several that I found online and they are perfect!  The boys gobble these right up!

Please excuse the pictures but it was after dark when I made these and we were all starving, so I just grabbed a couple quick pictures to get these on here for you guys.  I will update the pictures later.

Author:
Serves: 12-15
Ingredients
  • 2 pounds ground beef
  • 1 pkt. Lipton Onion Soup Mix
  • ¼ cup rehydrated minced onion flakes
  • 8 slices American Cheese
  • 12 Sara Lee (or similar) dinner rolls
Instructions
  1. Preheat the oven to 400°.
  2. Spray a large lipped cookie sheet with cookie spray or line with parchment paper.
  3. In a large bowl, mix together the ground beef and onion soup mix.
  4. Gently press the ground beef onto the cookie sheet. It should make a nice thin layer over the entire sheet.
  5. Sprinkle the minced onion over the meat and pat down.
  6. Bake in the oven to 20 minutes. The meat will shrink up and pull away from the edges. You'll end up with about ¾ of a pan of meat.
  7. When done, remove from the oven and soak the undersides of your buns in the excess grease in the pan. This is what makes them taste even more authentic!
  8. Now top the meat evenly with American Cheese slices and cook for 2 minutes to melt the cheese.
  9. Remove from the oven and let rest for just a couple minutes before using a pizza cutter to cut into patties.
  10. Now put your patties on your hamburger buns and serve!
  11. Optional: You can add condiments of your choosing. pickles, ketchup and mustard are standard on the real White Castle burgers.

What is your favorite fast food burger place??  Besides White Castle, I like Wendy’s, Sonic and Five Guys.  Yum!
