These Key Lime Crumb Bars are soooo delicious!  They are so light and refreshing.  Just perfect for a hot summer day.  I like keeping them in the fridge so they are extra cool.  Yum!!!   As usual with the recipes that I share, these are easy to make too.  I hope you will give them a try!

Key Lime Crumb Bars
Serves: 1 dozen bars
  • 1⅓ cup all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 stick (1/2 cup) butter, slightly softened
  • 1 cup brown sugar (lightly packed)
  • 1 cup old fashioned oats
  • 1 can (14 oz.) sweetened condensed milk
  • ½ cup key lime juice
  • zest of 1 lime
  1. Preheat your oven to 350°.
  2. In a large bowl, mix butter and brown sugar together until well blended
  3. In a smaller bowl, sift together the flour, salt, and baking powder.
  4. Add the oats into the butter mixture and stir well.
  5. Then add in the sifted flour mixture. Now stir until combined into a nice crumb.
  6. Lightly spray an 8x11 glass pan and press half of the crumb mixture into the bottom.
  7. In a small bowl, mix together the condensed milk, key lime juice and lemon zest.
  8. Spread this onto the crumb layer in your glass pan. Then use your hands to knead together the other half of the crumb mixture (to better incorporate the butter) and put it on top of the lime mixture. Do NOT press the crumb this time!
  9. Put in the oven and bake for 20-25 minutes and golden brown.
  10. Remove from oven and let sit for 30 minutes to rest.
  11. Refrigerate for two-four hours. Cut into bars and serve.

My daughter requested a chocolate chip cookie cake for her birthday this past year.  I was a little disappointed when she asked because I LOVE a good bakery cake piled high with butter cream frosting!  However, I am all about spoiling these angels of mine so she got exactly what she wanted!

After her birthday, we all started to crave those darn cookie cakes.  We made quite a few trips to the local cookie company which were not cheap.  I decided that I had to figure out the perfect recipe to make these at home.  I scoured the internet and settled on this one.  I made just a couple very small alterations and it turned out PERFECT!!  We were all so excited!

Chocolate Chip Cookie Cake
  • ¾ cup unsalted butter, room temperature
  • ¾ dark or light brown sugar
  • ¼ cup sugar
  • 1 large egg, at room temperature
  • 2 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp. cornstarch
  • 1 tsp. baking soda
  • ½ tsp salt
  • 1¼ cup semi-sweet chocolate chips
  1. Preheat your oven to 350°.
  2. Spray a 12" disposable aluminum pizza pan and set aside.
  3. Cream together the butter and sugars on medium speed in a large bowl. Mix until light and fluffy.
  4. In another large bowl, combine flour, cornstarch, baking soda and salt.
  5. While mixing on low speed, add the dry ingredients into the wet ingredients. Keep mixing until the dough comes together well.
  6. Stir in the chocolate chips.
  7. Now press the dough into the pizza pan. Bake for 16-20 minutes or until the edges start to brown.
  8. Let the cookie cool completely.
  9. Frost with butter cream, if desired.
  10. Enjoy!
**This makes a thin cookie cake. If you would like to make a thicker cake, double the recipe and use a deeper pizza pan.

** If you use dark brown sugar, your cookie cake will have a deeper flavor. We use light brown and love it. It's personal preference!

Happy Valentines Day!  This is one of our favorite holidays.  We celebrate “love month” at our house.  I just love this holiday.  My favorite part about it… seeing the kids go the extra mile to share their love for each other.  Melts this momma’s heart.

I knew I wanted to make decorated sugar cookies for my kiddos on Valentines, but I just didn’t have time to do the whole rolling and cutting thing.  I decided that I would do Sugar Cookie Bars.  These really are so good and easy too.  They taste just like my mom’s famous Christmas cookies which just delights my kids.  They are a nice light cookie with that wonderful creamy buttercream frosting.  Seriously.  They are the best Sugar Cookie Bars you will find.

The Best Sugar Cookie Bars
  • 1 cup all purpose flour
  • 1 cup white whole wheat flour
  • ½ tsp. baking powder
  • ½ tsp salt
  • ½ cup butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • ½ cup sour cream OR greek yogurt
For The Frosting:
  • ⅔ cup butter, softened
  • 2½ cup powdered sugar
  • 4 Tbsp. milk
  • 1 tsp. vanilla extract
  • red or pink food coloring (optional)
  1. Preheat your oven to 350°.
  2. Line a large jelly roll pan with aluminum foil. Spray well with cooking spray. Set aside.
  3. In a small bowl, mix together flours, baking powder and salt; stir together and set aside.
  4. In a large bowl, beat the sugar and butter together until creamy. Add in the egg and vanilla extract and beat well. Add in the sour cream (or greek yogurt) until combined.
  5. Slowly add in the flour mixture. Mix until just combined.
  6. Spread the dough into the prepared jelly roll pan. Dough can be sticky. Use pam on your hands to help with spreading the dough easier.
  7. Bake in the oven for 15-20 minutes until the edges are just starting to turn a light brown.
  8. Place on a wire cooling rack to cool. While cooling, you can start making your frosting.
  9. In a bowl, add the butter, powdered sugar and beat well until light and fluffy. Add in the milk, vanilla, and food coloring. Beat well until all combined.
  10. Spread frosting over the cookie bars once they have cooled. You can top with sprinkles you want.
  11. Place the bars in the fridge for an hour or so to set the frosting well. Cut into bars using a pizza cutter.
  12. Enjoy!
